Healthy meal because: kidneys are healthy, supplying plenty of vitamin B3, which is an important component of various coenzymes and thus supports the metabolism of proteins, fats and carbohydrates.
Ingredients:
- 6 Pork Kidneys
- salt
- 1 onion
- 2 garlic cloves
- 1 carrot
- 2 tbsp vegetable oil
- 150 ml white wine
- 350 ml Pork broth
- Freshly ground pepper
- potatoes
- 2 tbsp sunflower oil
- 4 sprigs fresh flat leaf parsley
Preparation:
1. Rinse the kidneys and remove any fat and connective tissue. Place in a bowl of cold salted water for 1 hour. Meanwhile, peel the onion and garlic and chop finely. Peel the carrot and finely dice. Rinse and drain the kidneys well and cut into bite-size pieces. Heat the oil in a saucepan and saute the kidney pieces on all sides. Add the onion, garlic and carrot, saute briefly and deglaze with the white wine and the pork broth. Season with salt and pepper, cover and simmer until the kidneys are tender, 40-45 minutes.
2. Meanwhile, peel, rinse and thinly slice the potatoes. Heat the oil in a skillet and saute the potatoes until golden brown and season with salt and pepper. Rinse the parsley, shake dry and chop finely. Arrange the kidneys with a little broth and the potatoes on warmed plates and serve sprinkled with parsley.
