Pork Hocks

Hocks are cut from the joint between the feet and the leg. This cut is commonly referred to as ham hocks or pork knuckles.

In many different kinds of cuisine, ham hocks are treasured for their collagen- rich tendons and meaty flavour. They make stews and braises extra thick and flavourful, which is why you’ll see them in stewed collard greens and baked beans.
