Sweet & Sticky Pork Ribs

Ingredients

Ribs

  • 3 pounds pork spareribs
  • 4 cloves garlic, minced
  • 1 tablespoon chopped rosemary
  • 1 tablespoon sugar
  • 1 tablespoon balsamic vinegar
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon cayenne pepper

Sweet & Sticky Sauce

  • 1 cup balsamic vinegar
  • 1 cup tomato sauce
  • 1/2 cup apple cider vinegar
  • 1/4 cup honey
  • 2 tablespoons mustard
  • 1 tablespoon sugar
  • 2 teaspoons Worcestershire sauce
  • 1 1/2 teaspoons hot sauce
  • 1/4 teaspoon salt

Method

Ribs

  1. Cut the rib rack in half if necessary and place it in a roasting pan.
  2. Combine the balsamic vinegar, cayenne pepper, minced garlic cloves, sugar, salt, and rosemary in a bowl.
  3. Rub the herb mixture evenly over the ribs. Put the ribs in the refrigerator and allow it to marinate in the herb mixture for at least 1 – 4 hours.
  4. Preheat the oven to 220 °C and place the rack of ribs in the centre of the oven in your roasting pan of choice.
  5. Pour 125ml of water into the roasting pan and cover the pan with aluminum foil.
  6. Roast the ribs for about 2 hours or until the meat is soft and tender, and can be easily separated from the bone.

Sauce

  1. Pour the balsamic vinegar into a saucepan and place over high heat. After bringing the vinegar to a boil, lower the heat to medium and continue to simmer the vinegar for about 8 minutes or until it is reduced to a third of the original volume.
  2. Carefully wish in the sugar, mustard, tomato sauce, apple cider vinegar, honey, hot sauce, Worcestershire sauces, and salt.
  3. Boil the mixture on high heat for two minutes and then simmer for 20 minutes until thickened. Remember to stir the mixture occasionally.
  4. Remove the mixture from the heat and allow it to cool until it’s room temperature.
  5. Remove the ribs from the oven and place it on aluminum foil in a baking tray. Generously brush the ribs with the sauce and bake uncovered for 10 minutes in the oven.
  6. Dish up and enjoy!
